I'm back, baby! And I've got so much to share with you.
The 1st Anniversary vacation was heavenly. So relaxing. So much delicious food. So many strawberry margaritas. We'll get to that.
Then there's the baby shower I hosted for a friend of mine nearly two weeks ago. Pictures are coming! {So's Christmas. I know.}
I made the most delicious chicken enchiladas last week. Seriously, I'm dreaming of enchiladas. I'm composing love notes to Jessica at The Novice Chef for bringing them into my life. I almost divorced The Mister when I found out he ate the last of the leftovers for lunch and didn't save me any. I figured it would be okay because then I could just marry Jessica and she could make me chicken enchiladas all the time. But then I remembered she was already married. And thus probably not into chicks. So I decided to forgive The Mister. But I'm still dreaming of chicken enchiladas.
I finally got the new lighting fixtures installed in the house. That is what we call progress friends!!! {three exclamation points totally warranted here.} I'm a decorating commitment-phobe on the road to recovery. Mom, I'll post pictures soon.
I read The Mermaid Chair by Sue Monk Kidd. {Author of The Secret Life of Bees} And really enjoyed it. And then found out they made a movie based on the book. Cool. Starring Kim Basinger. Not cool.

And then there was cake.
The top tier of our wedding cake to be exact. It spent 365 days camped out in our freezer and on Saturday, we finally ate it! It didn't taste half bad either.
It was stored in a tupperware container {Which took up an entire shelf in the freezer - I'm loving the newfound freezer space!} Inside the tupperware, the cake was wrapped in two layers of aluminum foil.
And then two layers of plastic wrap.

Once you scraped off the revolting fondant that was not supposed to be within 10 feet of our wedding cake, it was pretty tasty. A bit dry, but otherwise not bad. Still, I think I'll be happier next year when we can just order a fresh cake from a local bakery. {And certainly not from the prima donna who decided my cake would "look better" in fondant, despite the fact that HE wrote on the top of the order form in giant capital letters "NO FONDANT". This is what he told my mom when she called to politely complain about the mistake. The words sorry were not used. Oh well. I didn't even notice there was fondant on the cake until I ate a piece at brunch the next day. ha!}
I'm hoping to survive Friday at the office tomorrow and then meeting the girls for some {12} drinks tomorrow night. I'll be back Saturday with...well, an actual post.

Can we just talk about how jealous I am of your recent vacation?? Just seeing that fruity cocktail is making me long for the beach! I hope you all had a blast, and look forward to seeing pictures.
Oh, and I've bookmarked the chicken enchilada recipe - I have my own foolproof recipe for them, but I am always willing to try another one. Especially with that kind of rave review. :)
I will have to try that enchilada recipe. Your wedding cake is gorgeous, but I have to agree with you fondant is the most insanely disgusting thing to put on a cake. I never understand why people use it because it tastes so gross. Have a great weekend!
Ew, fondant IS nasty. That sucks that you specifically asked for NONE and that’s what you got. On the other hand, your cake was gorgeous and the inside looks TASTY! Cant wait to hear about your vacation!!

I will marry you if you promise to be ok eating the Chicken Enchiladas all the time! My husband has informed me that eating them three times (made them twice and had leftovers once) was too much for him. I think he is insane and I could eat these all the time! So if you promise to be ok eating these delicious enchiladas more then once a week, I will consider joining the other team! haha!
Anyways, so glad you had a good vacation...and I am still waiting on the Christmas pictures...I almost gave up and then you reminded me....maybe I will start hounding you for them. Or maybe you should save them for Christmas in July!
Hey there, The Novice Chef's husband here. I'm sorry but I'm very fond of my wife's cooking and she's not half bad either so unfortunately you can't have her. However I'm sure if you're ever down our way she'd be more than happy to cook something up for you and your husband. Btw congratulations on the 1 year anniversary!
I've always wondered how the cake tasted a year later. Our was cut up and served at our wedding on accident. Sigh.
I take it you got your passport, since they let you into the Bahamas! Damn, I was hoping you would have to give your ticket to me:(
