I'm always looking for healthy, delicious and quick meals to make on weeknights. Who isn't? Have you noticed that it's easy to come up with a meal that fits 2 out of the 3 criteria? There are plenty of meals which are healthy and quick but not so tasty (not chicken breasts and broccoli again!) or quick and delicious but not so nutritious.
Cooking Light is my go-to source for meals which meet all three criteria. Most of the meals are simple enough to be prepared quickly on a weeknight and not only taste great but are good for you. I love to flip through Cooking Light each month and tear out recipes which look good to me.
I found this recipe for Black Bean Burgers from the April issue of Cooking Light. The original recipe calls for a mango salsa but I just can't get on board with fruit salsas on savory dishes. Instead, I substituted guacamole for the mango salsa (and made a few other changes).
This meal was delish! The Mister and I are decidedly not vegetarians, but we didn't miss the meat in this meal at all. The black bean patties were flavorful and filling and the guacamole was a great compliment to the burgers. These two carnivores give this meal two thumbs up!
Black Bean Burgers
Adapted from Cooking Light, April 2010
Serves 2-3
1 (15-ounce) can black beans, rinsed and drained
1/4 cup finely chopped fresh cilantro
1/2 cup shredded light Monterey Jack cheese
1/8-1/4 cup panko (Japanese breadcrumbs)
1 teaspoons ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon sea salt
1/2 medium jalapeƱo pepper, finely chopped
1 large egg white
3 hamburger buns, lightly toasted
lettuce, onion and tomato for toppings
*great topped with avocado slices or guacamole
Directions:
Preheat oven to 350°. Place black beans in a medium bowl; mash with a fork. Stir in the next 8 ingredients (through egg whites). Shape bean mixture into 1/2-inch-thick patties. Arrange patties on a baking sheet coated with cooking spray. Bake at 350° for 20 minutes, turning once. Place on toasted hamburger buns and top as you like.

I know a Publix deli hamburger roll when I see one. That just made me very jealous and a little bit sad.
Ok, I know I would love these, it's the mister I wonder about! He is SUCH a meat eater. I ate black bean tacos this week with avacado and salsa and he thought I was crazy because there was no meat in them....sheesh.
