donut muffins


Um...YUM.

I knew the second I saw these muffins on The Pioneer Woman's food blog Tasty Kitchen that I had to make them.  Looks like a muffin. Tastes like a donut.  SOLD. 

I made them tonight and they ah-maz-ing.  As in, eat-them-at-home-so-no-one-sees-you-lick-the-cinnamon-sugar-off-your-fingers good.  Try them.  You won't be sorry. 

DISCLAIMER:  These are dipped in butter, then rolled in sugar.  I know, I know.  I realize it's still bathing suit season.  I suggest eating one and then getting these out of the house as soon as possible.  Hope my husband's co-workers enjoy them tomorrow morning! 

Cinnamon Sugar Donut Muffins
Adapted from Tasty Kitchen
Makes 12 muffins

Ingredients:

1 3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/3 cup oil
3/4 cup granulated sugar
1 large egg
3/4 cup milk

For the topping:
1/3 cup butter
1/2 cup granulated ugar
1 tablespoon cinnamon

Preparation Instructions:

Preheat oven to 350 degrees.  Spray a muffin tin with non-stick cooking spray. 

Combine flour, baking powder, salt, nutmeg and cinnamon in a bowl; set aside.  Combine oil, sugar, egg and milk in a separate bowl. Add the dry ingredients to the wet mixture and stir to combine. Distribute batter evenly into muffin tin and bake at 350 degrees for 15-20 minutes.

Meanwhile, melt the butter in a bowl. Combine the granulated sugar with cinnamon in another bowl.  When the muffins are done, remove them from the tin.  Dip muffins first in melted butter, then into the sugar & cinnamon mixture. 

These are AMAZING while warm. I'm sure they're great once cool too, but I only allowed myself one and it was warm.

I did go to the gym, but I didn't spin. Didn't make it in time for the 6:00 class. I baked these at about 9:00pm. Its amazing what you can get done at night when you stay up until 12:30!

oh my gosh oh my gosh. i saw the title of your post and got so excited i didn't even read the whole thing (YET). anyway, randomly, i felt inclined to make homemade donuts holes yesterday. totally out of the blue. we must be on the same wave-length.
