I finally got my act together and went to the grocery store last night. That means there are actually meals planned for the week in our house! This hasn't happened in quite some time. There has been a lot of Chick-fil-A and take out going on around here lately. Here's what we're eating this week:
Giada's Penne with Spinach Sauce and Grilled Chicken
Salsa Verde Sour Cream Enchiladas and Salad with Cilantro Pepita Dressing - I made this tonight and it was amazing. I want to put the dressing on everything. FYI - I halved the recipe and it still made a ton.
Blue Cheese Burgers on the grill with oven fries and salad
Breakfast for Dinner (yay for pancakes in the middle of the week!)
I usually only plan four meals a week. Inevitably, we'll have plans a few nights a week which make cooking a meal inconvenient. Plus, I know I'll want cereal for dinner at least one night this week. :)
Do you menu plan? If so, what are you eating this week?

To be honest I am having leftover dinner right now. My cooking has all but deceased. However, your menu has inspired me a little.
Secretly I'm hoping you have a little girl. I know that's selfish... Please forgive me
Thanks for your sweet comments!

I was just getting ready to make up my list for the week. Thanks for the great ideas!!
Must.try.cilantro.pepita.dressing. Sounds Amazing!
I love when you post your menu! Yes, I menu plan, even though I hate doing it. Otherwise we would have cereal for dinner every night! On Sunday I made chicken pot pie, then used some leftover chicken for chicken tacos last night. Tonight is spagetti and a salad, tomorrow is veggie stir fry, and Thursday is taco soup and corn bread.
That dressing sounds fantastic!
I'm pretty poor about meal planning during the week. (I'm finally bringing my lunch to work 3+ times a week. Baby steps!)
Dinner is often cereal or turkey sandwiches because we get home so late. This week we actually planned scallops and spinach last night and chicken and broccoli today. Then, it's fend for yourself until the weekend.
I am having a lovely assortment of Lean Cuisine and Smart Ones frozen meals...don't judge.
Giada's penne sounds delish! I'm going to add that to my recipe box.
I definitely meal plan and you'll be so thankful you've gotten yourself into that habit when your little tot arrives!
Sounds good! I make one new recipe a week (usually found on blogs) and the rest of the time its chicken or salmon with salad or vegetables. I love to cook, but am terrible about keeping the kitchen stocked so everytime I try a recipe it includes a run to the store. Must stock staples better!
that dessing sounds amazing!
I used to be soooooo good about this, but, I've been traveling so much for work and then I just don't want to cook and then--it's a horrible cycle. I need to snap out of it and get back to cooking at home!
By the way, check my blog Thursday, you might know someone that I wrote about (;
I have started to plan better now that going to the grocery is a luxury! this week I made the lemony sambuca chicken you wrote about - fabulous!!! tonight we had a dijon mustard pork chop, tomorrow is angel hair w/ shrimp and feta....thursday night we go to my parents! i never plan the weekends to leave it open!
You are so organized. I used to cook on Sunday for the week but my husband gets home so late that I've reverted back to college eating cereal for dinner. And green grilled cheese, which has to be good for you, right? :)
